GLP-1 Mediterranean Chicken Bowl

Mediterranean chicken salad with farro in a white bowl with a white linen napkin on a wooden board

Picture this, you’re sitting in front of my GLP-1 Mediterranean chicken bowl. It’s piled high with tender chicken, warm nutty farro, cool cucumber, and juicy cherry tomatoes, topped with a lemony Greek yogurt dressing so good you’ll question every bottle of ranch you’ve bought. It’s herby, just rich enough to feel like a treat, and light enough that you won’t be side-eyeing your stomach later.

This is what eating well actually feels like: bright, filling and nourishing without the hoops. On those days when your appetite is playing hide-and-seek, start with a half-bowl of this chicken salad; a scoop of farro, some chicken, a big spoonful of dressing. If you’re in a season of eating with intention, this one becomes a quiet staple.

Why This Recipe Works

This is Mediterranean cooking at its most forgiving. It comes together in under half an hour, looks impressive enough for company, and still tastes fresh after a few days in the fridge, so the leftovers feel like a win. I’ve lost count of how many times I’ve opened the fridge, hoping for inspiration, and felt relieved to see it waiting for me, like a gift from my past self.

Meal-Prep Friendly

This chicken salad bowl is infinitely meal-prep friendly. Keep the dressing separate from the salad until you’re ready to eat, so it doesn’t become soggy. But, everything else can be layered in advance and will hold well for up to 4 days.

Is this GLP-1 Friendly?

This GLP-1 Friendly Mediterranean Chicken Bowl was designed with those needs in mind. It’s high in protein, rich in fiber, easy to portion, and gentle enough to eat even on days when your appetite is lower than usual. That said, nutrition needs vary from person to person, and your healthcare provider or a registered dietitian is the best resource for guidance specific to your situation.

My Favorite Pairing Suggestions

This Mediterranean salad bowl works well with my sumac rubbed roast chicken; I’d recommend using the chicken thighs for a richer flavor in the salad. And, my juicy lemon chicken breast add amazing zing to the salad you won’t regret. If you want more of a dip instead of a dressing, I recommend my tzatziki dip. And, if you’re just not a fan of farro, try this with my Greek yogurt flatbread.

Why You’ll Love this Chicken Salad Bowl

  • High in protein. The shredded chicken and Greek yogurt deliver protein in every serving.
  • Genuinely satisfying in smaller portions. Farro is dense and fiber-rich, so a modest serving goes a long way.
  • Ready in under 30 minutes. Easy to assemble with minimal cooking time.
  • Flexible. Works warm or cold, with easy swaps if you’re missing an ingredient.

Ingredients Notes & Smart Swaps

This GLP-1 Mediterranean Chicken Bowl is all about simple, high-quality ingredients that bring something special to the dish, whether it’s flavor, texture, or a nutritional boost. Below, I’ll break down what each part adds and how to pick the best ingredients at the store.

What Goes In and Why It Works

Chicken: Tender, juicy, and tons of protein.

Farro: Adds a nutty flavor and sturdy enough not to turn to mush under the dressing.

Cucumber: Brings the crunch and a burst of freshness, like a palate cleanser between bites of everything else.

Parsley: Its slight bitterness keeps the yogurt and olive oil from feeling too heavy, and suddenly you’re eating something that tastes bright instead of bogged down.

Cherry Tomatoes: Add sweetness and acidity, brightening the bowl.

Greek yogurt: The creamy base that ties it all together. It’s tangy, it helps the spices cling to every bite, and it makes the whole bowl feel a little more special without weighing it down.

A drizzle of olive oil: Smooths everything out and lets the herbs do their thing. It’s the finishing touch that makes the whole bowl feel complete.

Lemon Juice: Sharpens all the flavors, and a little zest adds a citrusy aroma without watering things down. It’s the secret to making the whole bowl taste fresh and lively.

Greek oregano: Oregano brings a little earthiness.

Thyme: Adds a subtle, lemony, minty layer. Use it if available to deepen the dressing and round out the flavor.

Substitutions for the Chicken Bowl

Farro: Try quinoa, bulgur, or barley for a grain replacement and cauliflower rice for more vegetables.

Cucumber: Thinly sliced celery or radish gives you a similar crunch. Zucchini, lightly salted and pressed, is a softer option if you prefer.

Cherry Tomatoes: Sun-dried tomatoes (packed in olive oil, drained) give you a more intense, sweeter flavor. Roasted red peppers are another excellent swap if you want something softer and smokier.

Fresh Parsley: Fresh dill or basil both work well. Dried herbs can fill in if necessary, but use one-third the amount; dried herbs are more concentrated and can easily overwhelm a fresh dish.

Greek Yogurt: Full-fat coconut yogurt is a dairy-free option, though the flavor will be milder. Labneh makes a thicker, richer dressing if you want something even more decadent.

Lemon: Lime works for a slightly different flavor profile. Bottled lemon juice is a convenient swap, but it won’t deliver the same brightness, and you’ll lose the zest entirely.

Olive Oil: Avocado oil is a neutral alternative if you prefer a milder flavor while keeping the dressing smooth.

How to Make the GLP-1 Mediterranean Chicken Bowl

Whisk together the yogurt, oil, zest, juice, and spices. Set aside and refrigerate for at least 10 minutes, 30 minutes if you have time.

Cook your farro in broth, not water. I highly recommend my homemade chicken bone broth, but boxed works in a pinch.

Assemble the bowl with farro, vegetables, herbs, and chicken. Don’t use too much dressing at once, it can be overwhelming. Start with half the dressing, and taste before adding more.

Farro is an ancient whole grain with a nutty, chewy quality. It has been a staple in Mediterranean cooking for thousands of years. Farro does contain gluten, so it is not suitable for people with celiac disease or gluten intolerance. Quinoa is the most straightforward gluten-free swap and works beautifully in this bowl.

Yes. Swap the Greek yogurt in the dressing for a plain, unsweetened full-fat coconut yogurt or cashew yogurt. The flavor will be milder, so you may want to add a touch more lemon juice and dill to compensate.

Store the dressing separately. The dressing is the main reason a pre-assembled bowl can become watery, particularly because the yogurt base draws moisture from the vegetables over time. Store everything in separate containers and assemble just before eating.
